recipes, as requested :)

For our little Valentine's dinner I came up with a menu that I wanted, then used good ol' google to do the rest (well...almost the rest). Here are the recipes I used:

Balsamic Bruschetta:
servings: 4

4 roma (plum) tomatoes, diced
2 tablespoons and 2 teaspoons chopped fresh basil
2 tablespoons shredded Parmesan cheese
1 clove garlic, minced
1-1/2 teaspoons balsamic vinegar
1/2 teaspoon olive oil
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 loaf French bread, toasted and sliced

**In a bowl, toss together the tomatoes, basil, Parmesan cheese, and garlic. Mix in the balsamic vinegar, olive oil, kosher salt, and pepper. Serve on toasted bread slices.

Tomato-Basil Soup
servings:4

1 tsp. olive oil
1/4 c. apple juice
1/2 medium onion, finely chopped
2 cloves garlic, minced
1/2 c. diced red bell pepper
4 c. chopped fresh or canned tomatoes
1 c. vegetable stock (I used chicken broth)
1/3 c. orzo pasta (Sadly, I couldn't find any at the walmarts around here...the only grocery stores...so went without)
1/4 c. chopped fresh basil
1 pint heavy cream
1/4 c. butter


In soup pot, heat oil and apple juice over medium heat. Saute onion, garlic and pepper 8 to 10 minutes, stirring frequently, until onion is soft but not brown. Add small amounts of water if mixture becomes dry). Remove from heat. Add tomatoes and broth. Stir. Puree in blender and return to the pot. Add pasta; cook 10 minutes, stirring. Add butter and cream. Stir in. Simmer 15 min. do not boil. Add basil and serve immediately.

Tomato, olive and artichoke pasta
servings:4

1 1/2 cups fresh tomatoes, chopped small
1 (2 1/4 ounce) can black olives, chopped small
1 cup artichoke hearts, chopped small
1/4 cup capers (I left these out)
1/4 cup chopped fresh basil
1/4 cup olive oil
1 teaspoon Italian seasoning
salt & pepper
8-16 oz. angel hair pasta

Mix all ingredients (except pasta) in a bowl. Set aside to let flavors mix while you cook the pasta. Cook 8-16 oz.of angel hair pasta. Drain and immediately toss into tomato mixture. Serve with grated parmesan.

Chocolate Dessert Bowls

I placed a glass mixing bowl that fit perfectly on the rim of my pot over about 1 inch of simmering water and filled the bowl with a small bag of nestle chocolate chips. Stir the chocolate chips constantly as they melt, until smooth. Once completely melted, dip blown up balloons into chocolate. I used 7 inch balloons, but would like to try it with smaller ones. (I found that if I didn't blow the balloon up completely, so I could have a smaller bowl, the balloon would pop while in the chocolate. Not fun to clean up.) Set the balloons on wax paper that has been sprayed well with pam. I let mine sit for a day. After set, loosen the edge of the chocolate from the balloon before deflating, otherwise the bowl may collapse in with the balloon. Cut a small hole in the balloon to slowly let the air out.

I filled my bowls with red velvet cake mixed with a package of vanilla pudding and topped it with strawberries and this delicious sauce:

White Chocolate Mousse Drizzle and White Chocolate and Almond Cream

3 cups chilled whipping cream
1/4 cup butter, cut into pieces
1 pound good-quality white chocolate, finely chopped
1 teaspoons vanilla extract
1/2 teaspoon almond extract

1. Bring 1 cup cream and butter to simmer in heavy medium saucepan over medium heat, stirring until butter melts. Remove from heat. Add white chocolate and stir until smooth. Whisk in vanilla. Pour 1 1/2 cups white chocolate mixture into a small bowl; cover and freeze until cold, about 1 hour.
Let remaining white chocolate mixture in saucepan stand at room temperature until lukewarm, about 20 minutes.
2. Using electric mixer, beat remaining 2 cups cream and almond extract in large bowl until peaks form. Working in 3 batches, fold in lukewarm white chocolate mixture. Refrigerate whipped cream just until medium peaks hold, folding occasionally, about 3 hours.

(I don't think I completely followed this recipe and I only made a third of it. I think if you even just melted the white chocolate and drizzled it over the cake it would be divine.)

The perfect sandwich bag to prevent the bullies from stealing your sandwich. I so wish I had these growing up--not that bullies ever stole my lunch. Ok, actually it probably would have grossed me out and I wouldn't have eaten my lunch, but still...these are pretty cool.

Valentine's Dinner

Since we don't know all the good restaurants in the area and because we didn't want to be surrounded by a 100 others people eating on valentine's day, I made a nice 4 course Italian dinner for us at home. It was SO much fun to prepare but took a lot of time--But, so worth it. If I may say so myself, it all turned out fabulously! {MAKE SURE TO CHECK OUT THE WONDERFUL DESSERT AT THE BOTTOM!!}

ok, these little desserts were so fun to make! I dipped balloons in melted chocolate, let them sit for a day, then popped the balloon. The trick was figuring out just the right amount of air to put in the balloon. When I didn't have enough air in them, they popped while in the chocolate sending chocolate ALL OVER my kitchen.

still employed

We had quite a scare in our little area yesterday when Wal-Mart announced it is cutting 700-800 jobs from its headquarters. Luckily, Colby is still safe and has been told he shouldn't worry about being let go. Colby let me know that the Wal-Mart situation is unfortunate, because they planned these current cuts a year ago when they began reorganizing some of the depatments. It just happened to fall in a time when the whole business world is cutting jobs. Thankfully many of the jobs being cut from the home office are being transferred to work with the rest of the apparel office that was moved to New York a year ago.

Well, that's all. Colby is still employed (and so am I...at Gap) and I continue to look for a job I can use my degree in! Ha. I don't think folding jeans is using much of the marketing education I received.

Updating

So, I have tried to get caught up. I hate having things out of order, so I changed the date on all my new posts to match when they happened. Feel free to go back and see all about Vegas, Disneyland, our snowboarding mishap, bringing in the new year, Wyoming, and my parents visiting. Enjoy!

Ice storm pictures

Though the storm caused several problems, Colby and I loved driving around and seeing the beauty the storm left.

Of course, the storm wasn't all beauty. . .

Colby's car was encased in about a half inch of ice. luckily mine was in our garage.

6 of the 7 car ports collapsed. Management frantically ran around knocking on doors when the first one collapsed and most (including us) ignored the warning. After the 2nd (and 3rd, 4th...) we took it more seriously.

Trees were down all over the place and several knocked out electric lines.


but, its sunny now and all the ice is gone... :)

Amazing Husband

12 roses, 12 days before our 6 month anniversary.

He said I could throw one out each day as a countdown, but of course I decided against that.

For those of you who didn't find it in the headlines of your local paper (Grandma in California called to let me know good ol' Arkansas was on the front page...) we are in an ICE STORM!! Yep. A nice, friendly welcome to the natural state, Arkansas.

Luckily, Colby and I live in one of the few areas with electricity still on. {thank goodness} And, because my Dad convinced me 4 years ago I would need a four wheel drive car to get around Utah, we are managing the roads much better than the other cars (when we decide we can't sit around home any longer). We took a little drive in the area behind us the other day to see the ice damage {and beauty} and took some great shots. It was one of those days though that I wish I had a spectacualr camera to share the beauty of the ice storm. Of course I haven't uploaded my semi-decent photos yet, so you will have to check back later for those, and all the other posts I am still behind on. Oops. (Oh, and because of the weather, our internet installation will be pushed back even further. pshh.)

But, I shouldn't complain. While others are sitting in their home freezing or have opted to go fork out the money to stay in hotels, I get to sit at home cuddled up on my couch eating homemade bread and watching a movie with Colby, because WalMart cancelled work for 3 days. :) Lucky me.

Parents came to visit

My parents came to visit a week after we moved in. They were headed to Cancun for a business trip and decided to swing up to Arkansas on their way. They were only here for 2 days, and we made every minute count.


We drove out to Beaver Lake and had a small picnic in the car. It was too cold to eat it outside. The lake is huge and we can tell it will be absolutely breathtaking once all the trees turn green.

When Lindsey was born I made her a blanket just like this one. Now, eleven years later, it is in shreds but she still sleeps with it nightly. She wanted a new one so Mom brought the stuff and we made one for her together. It was great because it gave me a project to learn how to use my new sewing machine with!
Colby was glad to have Dad there so he could finally hang our new TV (our little graduation gift to ourselves). Dad also convinced me that Colby was right...we really do need a drill. So, after a short trip to Home Depot together, they came back with a new drill and sawzall. Colby was a happy camper.
And of course, being in wally-world, we had to take a small trip to where Walmart all began.

the journey

Here are all of our belongings ready to be driven across half the country. It was kind of a weird feeling leaving with everything we owned all with us. (Except my car that WalMart shipped out for us.)

Proof that I drove. Colby just reminded me that I drove less than 3 hours of the 20 hours drive, but hey, i still drove. (It was quite nerve racking for both of us when I drove, and we figured we would get there faster with him driving.)

This was our fabulous view for the majority of the trip. The main alterations were snow/ice or more semi trucks.

We were 10 minutes from the WinterQuarters temple, so swung by and did a session. Here is Colby hanging out of the Uhaul.
Sadly I couldn't find my tights, so had to brave the weather with bare legs. People were looking at me like I was crazy!

We wanted to see my friend Lauren Foutz at the winter quarters visitor center, but she wasn't there. We took some time to check it out anyway. It was a really neat center and we were able to learn a little about the Mormon pioneers.


Finally, around midnight, we made it to our new home. Here is our front door! We will post pictures of the whole place later.

Arkansas...home sweet home

Well, we made it...after 1400 miles of driving, 20+ hours in the 25 foot-long UHAUL (with car trailer on the back), 2 nights in a hotel, and way too many meals in a restaurant. The drive was memorable and a good time for Colby and me. We even were able to make a stop at the Winter Quarters Visitor center and do a session there at the temple. But, all in all, we are glad to be done driving.

Currently we have all of our stuff in our new apartment, but most of it is still in boxes. I hope to be able unpack it all while Colby is at his FIRST DAY OF REAL WORK! WHA-HOO!! "Real world"....here we come! Wish us luck!

I finally got to meet Kellen, my brother-in-law. He just returned from his mission in Uraguay, so we headed up to Wyoming to spend some time with the fam. It was great to meet him and spend time with Mom and Dad H before we left to Arkansas. It was a short, but fabulous trip.

When Mom found out Colby had never been to Disneyland, it was made a priority during Christmas break. But, once we got there spent over an hour in line just to get a ticket, we decided this wouldn't be the best experience for Colby and decided to go back another day. So, Colby's first disney adventure was only to the front gate (and downtown disney).

Looks like Colby and I will be in ARKANSAS a month from now. Colby accepted his finance position with Wal-Mart's headquarters and will start on January 19. We are excited to start this portion of our life together and look forward to all it will bring!

1. purchasing ankle cut socks to replace all the tall socks!
2. Riding my bike to school early with a helmet (I was a safe person...) then doing my hair in the bathroom with tons of butterfly clips. My helmet would have messed up the do.
3. Playing the flute in the Dartmouth Middle School Band.
4. Wearing Braces

1. Call the CEO of TWG to discuss my recent job offer
2. Work on my market research final project
3. Write 15 pages of personal goals for my personal finance class
4. Clean our apartment

4 Things I love about my husband:
1. He loves me no matter what!
2. He is great at helping out with chores at home. I think his favorite is hanging up the towels that I sometimes leave on the floor... ;)
3. He is brillant, which I have learned more this semester as I have had two classes with him.
4. He has an amazing testimony!
5. (ok, I couldn't stop at 4...) He has an AMAZING personality and can carry on a conversation with anyone. For me, that is amazing. He is such a people person.

4. I love pumpkin seeds. Colby and I carved pumpkins the day after halloween just so I could cook the seeds. Store bought ones don't usually do it for me.
